  • Brown sugar | 1.00 cup packed
  • Dark corn syrup | 1.00 cup
  • Egg, whole, raw | 1.00 medium
  • Lemon juice, raw | 2.00 tsp
  • Wheat flour, white, all-purpose, unenriched | 2.75 cup
  • Baking soda | 0.50 tsp
  • Spices, cinnamon, ground | 1.00 tsp
  • Spices, cloves, ground | 0.50 tsp
  • Spices, nutmeg, ground | 0.50 tsp
  • Spices, cardamom | 0.75 tsp, ground
  • English walnuts | 0.50 cup, chopped

Instructions

  1. Preheat oven to 400 degrees F (200 degrees C).
  2. Line a cookie sheet with parchment paper and lightly grease.
  3. In a large bowl, mix together the corn syrup, brown sugar, egg, lemon juice, and lemon zest, with an electric mixer.
  4. Sift together the flour, baking soda, cinnamon, cloves, nutmeg, and cardamom, and stir into the sugar mixture.
  5. Add mixed candied fruits and chopped nuts; mix well.
  6. Drop dough by tablespoons onto prepared cookie sheet, about 4 inches apart.
  7. Spread dough into a 3 inch circle.
  8. Bake in the preheated oven for 12 to 14 minutes, cookies should be browned and firm.
