Ingredients

  • Salt | 0.25 tsp
  • Shredded coconut meat | 2.50 cup, shredded
  • Egg, white, raw | 4.00 large
  • Powdered sugar | 1.00 cup sifted

Instructions

  1. Beat egg whites until fluffy but not stiff.
  2. Stir in sugar, salt, vanilla.
  3. Blend in coconut.
  4. I used a measuring tablespoon to form the cookies.
  5. Recipe makes about 20 cookies.
  6. Bake at 325 degreesF about 15 to 20 minutes, or until lightly browned.
