Ingredients

  • Egg, whole, raw | 3.00 small
  • Butter without salt | 2.00 tbsp
  • Granulated sugar | 0.33 cup
  • Coconut meat | 0.25 cup, shredded
  • Low sodium baking powder | 0.25 tsp
  • Coconut milk frozen | 3.00 tbsp
  • Cake wheat flour, enriched | 1.00 cup unsifted, dipped

Instructions

  1. Sift flour and baking powder.
  2. Beat butter, eggs and sugar, add in the coconut meat.
  3. Now fold the flour into the egg and butter mixture
  4. Gradually add in the coconut milk and continue mixing the
  5. batter until there are no lumps.
  6. Fill muffin cups halfway with batter.
  7. Sprinkle grated coconut on top.
  8. Bake at 400 degrees F for 20-25 minutes.
