- Sift flour and baking powder.
- Beat butter, eggs and sugar, add in the coconut meat.
- Now fold the flour into the egg and butter mixture
- Gradually add in the coconut milk and continue mixing the
- batter until there are no lumps.
- Fill muffin cups halfway with batter.
- Sprinkle grated coconut on top.
- Bake at 400 degrees F for 20-25 minutes.
