Ingredients

  • Canola oil | 2.00 tsp
  • Corn, sweet, yellow, frozen, kernels cut off cob, unprepared | 1.00 cup
  • Shallots, raw | 0.50 cup
  • Tomatoes, red, raw | 2.00 cup, chopped or sliced
  • Spices, tarragon, dried | 1.00 tbsp, leaves
  • Salt | 0.25 tsp

Instructions

  1. Heat oil in a medium skillet over medium heat.
  2. Add corn and diced shallots and cook, stirring occasionally, until lightly browned, about 5 minutes.

  4. Stir in diced tomatoes, tarragon (or basil) and salt.(adjust seasoning according to taste).
  5. Serve immediately.
