  • Tomatoes, red, raw | 6.00 large whole 3" dia
  • Cheese, cottage, creamed | 2.00 cup, small curd not packed
  • Mayonnaise, with salt | 2.00 tbsp
  • Pork, cured, bacon, pan-fried | 5.00 slice cooked
  • Onions raw | 2.00 tbsp chopped
  • Capers, canned | 1.25 tbsp, drained
  • Spices, pepper, black | 0.25 tsp, ground

  1. To prepare tomato shells-rinse firm tomatoes and peel if desired, chill in refrigerator, cut a slice from top of each tomato., using a spoon, remove pulp.Invert shells and set aside to drain. Chill and sprinkle lightly with salt before filling.
  2. Thoroughly blend together cottage cheese and salad dressing.
  3. Mix in lightly but thoroughly crumbled bacon, onion, capers and pepper, chill in refrigerator.
  4. When ready to serve, lightly fill tomato shells with cottage cheese mixture.
  5. If desired, garnish with sprigs of parsley.
