  • Apple(s) without skin, raw | 4.00 medium 3" dia
  • Onions raw | 1.00 medium 2-1/2" dia
  • Brown sugar | 0.66 cup packed
  • unsweetened canned apple juice | 0.33 cup
  • Ginger root, raw | 6.00 tsp
  • Butter without salt | 2.00 tbsp
  • Balsamic vinegar | 1.00 tbsp
  • Mustard seed, ground | 1.50 tsp
  • Cranberries, raw | 1.00 cup, whole

Instructions

  1. Arrange a rack in upper third of oven and preheat oven to 400°F.
  2. Peel, core and quarter 4 medium apples (8 oz. each), and cut them into 1/2-inch cubes.
  3. Place in a 13-by-9-inch glass baking dish.
  4. Add 1 coarsely chopped medium onion, 2/3 cup light brown sugar, 1/3 cup fresh apple cider or apple juice, 2 Tbsp. peeled and minced fresh ginger, 2 Tbsp. melted unsalted butter, 1 Tbsp. balsamic vinegar and 1 1/2 tsp. mustard seeds. Stir to mix and then spread evenly in dish.
  5. Bake; stirring occasionally, for 1 hour.
  6. Stir in 1 cup fresh or thawed cranberries (4 oz.) and bake until cranberries are softened, about 20 minutes.
  7. Serve warm or at room temperature with roasted or grilled pork or poultry.
