Creamy Mashed Cauliflower Recipe

Ingredients

  • Cauliflower, raw | 8.00 cup chopped 1/2" pieces
  • Garlic, raw | 4.00 Tbsp
  • Calcium fortified skim milk | 0.33 cup
  • Olive oil | 4.00 tsp
  • Butter without salt | 0.33 tbsp
  • Salt | 0.50 tsp
  • Spices, pepper, white | 0.50 tsp, ground
  • Chives, raw | 0.50 tsp chopped

Instructions

  1. Place cauliflower florets and garlic in a steamer basket over boiling water, cover and steam until very tender,
  2. 12 to 15 minutes.
  3. (Alternatively, place florets and garlic in a microwave-safe bowl with 1/4 cup water, cover and microwave on High for 3 to 5 minutes.)
  4. Place the cooked cauliflower and garlic in a food processor. Add milk, butter, 2 teaspoons of olive oil, salt and pepper. Blend smooth and creamy.
  5. Transfer to a serving bowl.
  6. Drizzle with the remaining 2 teaspoons of olive oil and garnish with chives, if desired.
  7. Serve hot.
