Ingredients

  • Onions raw | 3.00 tbsp chopped
  • Butter without salt | 1.00 tbsp
  • Russet potatoes, raw | 1.00 Potato small 1-3/4" to 2-1/4" dia
  • Home prepared, chicken stock | 1.00 cup
  • Cream, sour, cultured | 1.00 tbsp
  • Crimini mushrooms, raw | 2.00 cup whole

Instructions

  1. Chop the mushrooms and potato, set aside.

  2. Fry the chopped onion in the butter and then add the mushrooms.
  3. Bring the stock to the boil; add chopped potato and simmer until soft then add the mushrooms mixture and blend, over low heat; add the sour cream.
  4. Season with salt and peppers to serve.
