Ingredients

  • Apples, raw, with skin | 1.00 cup, quartered or chopped
  • fresh pineapple, raw | 1.00 cup, chunks
  • Pecans | 0.25 cup, chopped
  • Sour cream, reduced fat | 0.25 cup
  • Salt | 0.13 tsp
  • Cucumber, with peel, raw | 3.00 cucumber 8-1/4"

Instructions

  1. In a small bowl, combine finely chopped apples, pineapples, pecans, sour cream and salt. Cover and refrigerate until chilled.
  2. To score cucumbers, cut lengthwise strips through peel. Cut each cucumber into 16 slices.
  3. Blot with paper towels to remove moisture. Spoon 1 teaspoon apple mixture on each slice.
