- Thinly slice the scallions; cut the cucumbers, deseed and chop them. Now put together the scallions, cucumber, lemon peel, lemon juice, vegetable soup, salt and pepper in a blender. Process the mixture until puree.
- Then add the cream, stir. Let place in the refrigerator until very cold for about 1 hour. Garnish with the scallions, cucumber and lemon peel. Serve "Cucumber Cold Soup Recipe" chill.
