  • Spring onions | 3.00 medium 4-1/8" long
  • Parsley, raw | 0.25 cup chopped
  • Fresh peppermint | 6.00 tbsp
  • Cream, sour, cultured | 0.50 cup
  • Yogurt, plain, skim milk | 1.50 cup 8 fl oz
  • Cucumber, peeled, raw | 2.00 medium
  • Garlic, raw | 1.00 Tbsp
  • Salt | 0.13 tsp
  • Spices, pepper, white | 0.25 tsp, ground

Instructions

  1. Trim and roughly chop the scallions; Cut the cucumbers, dessed and then roughly chop them; roughly chop the garlic. Now combine yogurt, cream, mint, parsley, scallions, cucumber, garlic, salt and white pepper in a blender. Process the mixture until smooth.
  2. Ladle into the bowl and cover. Let refrigerate for 2 hours. Garnish Cucumber Mint Soup Recipe with the mint sprigs and cucumber slices and serve.
