Ingredients

  • Butter without salt | 1.00 cup
  • Granulated sugar | 1.50 cup
  • Orange peel, raw | 1.00 tbsp
  • Orange juice, raw | 0.50 cup
  • Egg, whole, raw | 3.00 medium
  • Self-rising enriched wheat flour | 3.00 cup
  • Baking soda | 0.50 tsp
  • Salt | 0.50 tsp
  • Buttermilk, low fat | 1.00 cup
  • Medjool dates | 2.00 cup pitted and chopped

Instructions

  1. Heat oven to 350°. Line 20 to 22 cupcake molds with paper liners or sprinkle some flour inside.
  2. Beat butter and sugar until light then beat in the eggs. Add vanilla, orange peel and orange juice, beat until blended.
  3. Slowly beat in about 1.5 cups of the flour, soda and salt. Blend in buttermilk then beat in remaining flour until smooth and well blended. Stir in chopped dates.
  4. Fill prepared molds to about 3/4 full. Bake cupcakes for 20 to 25 minutes or until a toothpick inserted in center comes out clean.
  5. Cool and frost before serving.
