Ingredients

  • Onions raw | 1.00 medium 2-1/2" dia
  • Garlic, raw | 2.00 Tbsp
  • chicken broth canned, reduced sodium | 30.00 oz
  • Olive oil | 1.00 tablespoon
  • Salt | 1.00 tsp
  • Spices, tarragon, dried | 1.00 tbsp, leaves
  • Spices, pepper, black | 1.00 tbsp, ground
  • Asparagus, raw | 30.00 oz
  • SILK unsweetened soymilk | 0.50 cup

Instructions

  1. Chop the onions, and crush garlic cloves. Thinly slice asparagus and set aside.
  2. Place onion and olive oil in a large pot and sauté for 5 minutes. Then place the asparagus, tarragon, garlic, chicken broth, salt and pepper in a pot and cook for 15 minutes, stirring continuously.
  3. Now place the soup in a blender and blend until smooth. Transfer to the pot, ladle soymilk and cook until hot.
