Ingredients

  • Brown rice, long grain, raw | 0.33 cup
  • Broccoli, raw | 2.00 cup chopped
  • Carrots, raw | 1.00 cup chopped
  • Pork leg ham, raw | 6.00 oz
  • Cheese, swiss | 2.00 oz
  • Cheddar cheese | 3.00 oz
  • Cayenne pepper | 0.13 tsp
  • Margarine, regular, 80% fat, tub, without salt | 1.00 tbsp

Instructions

  1. Cook rice in large saucepan according to package directions, omitting salt and fat. Remove rice packet when cooked; reserve water.
  2. Add broccoli and carrots to water in saucepan. Bring to boil; reduce heat. Cover and simmer 3 minutes or until broccoli crisp tender.
  3. Drain vegetable put vegetable and cooked rice back in saucepan; heat over medium-low heat.
  4. Add ham, Swiss, 1 ounce Cheddar, margarine and cayenne; Stir gently.
  5. Sprinkle evenly with remaining Cheddar; cover and cook 3 minutes.
