Ingredients

  • Canola oil | 1.00 tbsp
  • Onions raw | 3.00 medium 2-1/2" dia
  • Carrots, raw | 1.00 medium
  • Peppers, jalapeno, raw | 3.00 tsp
  • Garlic, raw | 2.00 cup
  • Spices, chili powder | 1.00 tbsp
  • Spices, cumin seed | 1.00 tsp powdered
  • Canned tomatoes, packed in tomato juice | 3.50 cup
  • Crushed tomatoes | 14.00 oz
  • Brown sugar | 1.00 tsp unpacked
  • Salt | 0.25 tsp
  • Red kidney beans, canned | 2.00 cup
  • Bulgur, dry | 0.33 cup
  • Low fat yogurt | 0.50 cup 8 fl oz
  • Spring onions | 0.33 cup, chopped
  • Cilantro, Fresh, Chopped | 0.25 Cup

Instructions

  1. Chop the onions and carrots; chop the garlic cloves finely; crush the canned tomatoes with the juices. Take a Dutch oven, heat the oil in it at a medium heat. Place the onions, jalapeno, carrots, garlic, chili powder and cumin in it and cook for 5 minutes, stirring.
  2. Now put the tomatoes with their juices, sugar and salt in the oven and cook for 5 minutes more at high heat. Lower down the heat and then stir in the bulgur and beans. Simmer for about 15 minutes.
  3. Garnish 'Easy Vegetarian Chili Recipe' with the scallions, cilantro and yogurt and then serve.
