- Halve pita breads to make 8 rounds.
- Toast bread under the broiler until lightly browned.
- When cooled, break into large pieces.
- Combine lettuce, tomatoes, bell peppers, onions, parsley and mint in a salad bowl.
- Drizzle oil over vegetables and toss to coat.
- Add lemon juice and vinegar gradually while tossing salad. Season with salt and pepper.
- Serve with pita bread pieces.
