Ingredients

  • Pita, whole wheat | 4.00 pita, large 6-1/2" dia
  • Romaine lettuce, raw | 1.00 cup shredded
  • Tomatoes, red, raw | 1.00 cup, chopped or sliced
  • Peppers, sweet, red, raw | 1.00 cup, chopped
  • Onions raw | 0.75 cup, chopped
  • Parsley, raw | 0.25 cup chopped
  • Fresh spearmint | 8.00 tbsp
  • Olive oil | 2.00 tablespoon
  • Lemon juice, raw | 1.00 fl oz
  • Red wine vinegar | 3.00 tbsp
  • Salt | 0.50 tsp
  • Spices, pepper, black | 0.50 tsp, ground

Instructions

  1. Halve pita breads to make 8 rounds.
  2. Toast bread under the broiler until lightly browned.
  3. When cooled, break into large pieces.
  4. Combine lettuce, tomatoes, bell peppers, onions, parsley and mint in a salad bowl.
  5. Drizzle oil over vegetables and toss to coat.
  6. Add lemon juice and vinegar gradually while tossing salad. Season with salt and pepper.
  7. Serve with pita bread pieces.
