Ingredients

  • Brown rice, medium grain, cooked | 2.00 cup
  • Onions raw | 1.00 small
  • Carrots, raw | 1.00 medium
  • White mushrooms raw | 4.00 medium
  • Cowpeas, leafy tips, boiled, drained, without salt | 0.50 cup, chopped
  • Corn, sweet, yellow, frozen, kernels on cob, unprepared | 0.50 cup kernels
  • Raw sprouted mung beans | 1.00 cup
  • Frozen unsweetened pineapple juice | 0.75 can 6 fl oz
  • Salt | 1.00 tsp

Instructions

  1. Sauté the onion in a non-stick pan (lid on) in a little pineapple juice until soft.
  2. Add in all the vegetables and beans along with corns.
  3. Stir in soy sauce and adjust salt according to taste.
  4. Add in the cooked brown rice in to the vegetables and stir fry for 10-12 minutes.
  5. Serve hot.
