Fruity Lettuce Salad with Lemon Dressing Recipe

Ingredients

  • Granulated sugar | 0.25 cup
  • Lemon juice, raw | 0.33 cup
  • Onions raw | 0.75 tbsp chopped
  • Mustard, prepared, yellow | 1.00 tsp
  • Salt | 0.50 tsp
  • Olive oil | 0.33 tablespoon
  • Spices, poppy seed | 1.00 tbsp
  • Romaine lettuce, raw | 2.00 cup shredded
  • Cheese, swiss | 3.00 oz
  • Cashew nuts, raw | 4.00 oz
  • Dried cranberries/craisins, sweetened | 0.25 cup
  • Apples, raw, with skin | 1.00 medium 3" dia
  • Pears, raw | 1.00 medium
  • Canned mandrain oranges, drained | 2.00 cup

Instructions

  1. Peel then finely chop the apple and pear.
  2. To prepare the dressing, blend sugar, lemon juice, onion, mustard and salt in a blender. While blender is running, slowly add the oil and blend until mixture's smooth. Stir in poppy seeds.
  3. To prepare the salad, toss lettuce, cheese, cashews, cranberries, apple, pear, and oranges in a large mixing bowl.
  4. Pour the dressing and toss gently to coat then serve!
