Ingredients

  • Spring onions | 8.00 medium 4-1/8" long
  • Onions raw | 1.00 small
  • Home prepared, chicken stock | 2.50 cup
  • Romaine lettuce, raw | 0.25 cup shredded
  • Butter without salt | 0.33 tbsp
  • Olive oil | 1.00 tsp
  • Salt | 1.00 dash
  • Spices, pepper, black | 1.00 dash
  • Garlic, raw | 1.00 tbsp, chopped

Instructions

  1. Remove stems, and slice all the spring onions along with the bulbs and peel, remove ends and finely chop onion.
  2. Heat half a tsp of butter in a pan, add 2 tbsp of chopped spring onions, when spring onions start to brown around the edges, add black pepper and salt (to taste).
  3. Remove from heat and reserve for garnish.
  4. Heat olive oil a saucepan, add chopped onion, garlic and salt, fry till onion turns translucent and starts to brown.
  5. Stir in chicken stock and simmer for 10 minutes, add remaining spring onion and simmer for 5 more minutes.then, add shredded lettuce and simmer for a minute.
  6. Garnish with home made croutons and fried spring onion.(optional)
