Ingredients

  • Palm kernel oil | 2.00 tablespoon
  • Onions raw | 2.00 large
  • Potato, skin, raw | 8.00 oz
  • Garlic, raw | 2.00 Tbsp
  • Ginger root, raw | 2.00 slices 1" dia
  • dried coriander leaf | 1.00 tsp
  • Spices, cumin seed | 1.00 tsp powdered
  • Self-rising enriched wheat flour | 1.00 tbsp
  • Organic vegetable broth | 3.50 cup
  • Peas, green, raw | 1.00 lb
  • Fresh peppermint | 3.00 tbsp
  • Low fat yogurt | 0.66 cup 8 fl oz
  • Corn flour, whole-grain, white | 0.50 tsp
  • Milk, nonfat, skim, with vitamin A and D | 0.25 cup

Instructions

  1. Peel the onions, potatoes and garlic; coarsely chop onions, potatoes, ginger root, and fresh mint. Set aside.
  2. Heat up oil in a preheated wok, add and cook onions, potatoes for 3 minutes. Add garlic, ginger, cumin, coriander and flour, stir fry for 1 minute. Add stock, half the mint, peas and let boil; stirring. Cover and simmer on reduced heat for 15 minutes.
  3. Using a blender or food processor, puree the soup into it and add the mixture again to the pan, season according your taste with pepper and salt. Blend some yogurt together with corn flour and stir into the pan.
  4. Add milk and bring to soft boil, stirring almost constantly and cook for 2 minutes. Garnish with extra mint sprigs and serve hot Green Pea Soup Recipe.
