Ingredients

  • Wheat flour bleached | 1.50 cup
  • Bananas, raw | 1.25 cup, mashed
  • Milk, nonfat, skim, with vitamin A and D | 0.50 cup
  • Brown sugar | 0.50 cup packed
  • Low fat vanilla yogurt | 0.50 cup 8 fl oz
  • Canola oil | 0.25 cup
  • Low sodium baking powder | 1.50 tsp
  • Egg, white, raw | 2.00 large
  • Dry roasted mixed nuts, no salt | 0.50 cup

Instructions

  1. Heat oven to 350°. Grease bottom only of loaf pan with margarine or a little canola oil, 8 1/2x4 1/2x2 1/2 inches.
  2. Mix dry banana bread ingredients in a large bowl. Wisk together the milk, yogurt, egg whites and bananas. Pour into the flour mixture and combine until just moistened and slightly lumpy. Pour into loaf pan.
  3. Bake 1 hour or until an inserted toothpick comes out of the banana bread cleanly.
  4. This healthy banana bread recipe is easily doubled or tripled if you have a freezer full of old bananas.
