- Peel and cube the potatoes.
- Preheat oven to 450°F. Combine basil, oregano, garlic, thyme, parsley, dried red pepper, salt and oil in a bowl. Mix in the potatoes and onion until coated. Apply pepper and mix well. Place the potatoes and onion on roasting pan, place in a single layer.
- Roast for 25-30 minutes; turn every 10 minutes to roast well on all sides. Serve.
