Ingredients

  • Tomatoes, red, raw | 1.00 cup, chopped or sliced
  • Fresh peppermint | 2.00 leaves
  • Garlic, raw | 1.00 Tbsp
  • Fresh basil | 2.00 tbsp, chopped
  • Parsley, raw | 2.00 tbsp
  • Feta cheese | 0.33 cup, crumbled
  • Lemon juice, raw | 0.50 lemon yields
  • Olive oil | 2.00 tablespoon
  • Salt | 1.00 dash
  • Spices, pepper, black | 1.00 dash
  • Chickpeas garbanzo beans, canned | 2.00 cup

Instructions

  1. Drain chickpeas and rinse them well with cold water.
  2. Chop tomatoes, and mince garlic. Add to a bowl with juice from 1/2 lemon.
  3. Mince fresh herbs and add to bowl along with crumbled feta and chickpeas.
  4. Drizzle with olive oil and season with salt and pepper.
  5. Serve at room temperature or chill and serve. Keeps for days and gets better in the fridge!
