Homemade Turkey Soup Recipe

Ingredients

  • Skinless turkey breast, raw | 2.00 unit yield from 1 lb turkey
  • Onions raw | 2.00 medium 2-1/2" dia
  • Celery, raw | 3.00 stalk, medium 7-1/2" - 8" long
  • Spices, thyme, dried | 1.00 tsp, ground
  • Spices, rosemary, dried | 0.50 tsp
  • Spices, sage, ground | 0.50 tsp
  • Spices, basil, dried | 1.00 tsp, ground
  • Spices, marjoram, dried | 0.50 tsp
  • Spices, tarragon, dried | 0.50 tsp, ground
  • Salt | 0.50 tsp
  • Spices, pepper, black | 1.00 dash
  • Corn pasta, cooked | 1.00 cup

Instructions

  1. Place turkey breast in large 6-quart pot. Cover with water until at least threequarters full.
  2. Peel onions, cut into large pieces, and add to pot. Wash celery stalks, slice, and add to pot.
  3. Simmer covered for about 21/2 hours.
  4. Remove carcass from pot. Divide soup into smaller, shallower containers for quick cooling in refrigerator. After cooling, skim off fat.
  5. While soup cools, remove remaining meat from turkey carcass. Cut into pieces.
  6. Add turkey meat to skimmed soup, along with herbs and spices.
  7. Bring to boil and add pasta. Continue cooking on low boil for about 20 minutes, until pasta is done.
  8. Serve at once or refrigerate for later reheating
