Ingredients

  • Wheat flour, white, all-purpose, unenriched | 1.50 cup
  • Powdered sugar | 0.50 cup sifted
  • Butter salted | 0.75 cup
  • Egg, whole, raw | 4.00 medium
  • Granulated sugar | 1.50 cup
  • Lemon juice, raw | 0.50 cup
  • Low sodium baking powder | 1.00 tsp
  • Dried coconut flakes | 0.75 cup

Instructions

  1. In a small bowl; combine flour and powdered sugar; cut in the butter until crumbly. Press into a lightly greased 13-in. x 9-in. baking dish. Bake it at 350°F for 15 minutes.
  2. Meanwhile, in another small bowl; beat the eggs, sugar, lemon juice and baking powder until combined. Pour over crust; sprinkle with coconut.
  3. Bake at 350°F for 20-25 minutes or until golden brown. Cool on a wire rack. Cut into squares.
