Ingredients

  • Home prepared, chicken stock | 2.00 cup
  • Olive oil | 0.25 cup
  • Lemon juice, raw | 0.25 cup
  • Mustard, prepared, yellow | 0.50 tsp or 1 packet
  • Russet potatoes, raw | 10.00 Potato medium 2-1/4" to 3-1/4" dia
  • Salt | 0.50 tsp
  • Spices, pepper, black | 0.50 tsp, ground

Instructions

  1. Peel and quarter potatoes.
  2. Place in a baking tray in one layer.
  3. Whisk together chicken stock, olive oil, lemon juice, mustard paste, salt and pepper.
  4. Taste and adjust seasonings
  5. Pour mixture over potatoes.
  6. Bake in a slow oven at 300-350°F for 2-3 hours, uncovered, 'til fork tender.
  7. Garnish with fresh rosemary.
