Ingredients

  • Coconut meat | 0.66 cup, shredded
  • Whole wheat, rolled oats, presweetened, with pecans, cereal | 2.00 cup 1 NLEA serving
  • Brown sugar | 1.00 cup packed
  • Spices, cinnamon, ground | 0.50 tsp
  • Lentils raw | 0.75 cup
  • Olive oil | 0.50 cup
  • Egg, whole, raw | 1.00 small
  • Bran flakes cereal | 1.00 cup 1 NLEA serving
  • Chocolate syrup | 4.00 serving 2 tbsp

Instructions

  1. Place rack in centre of oven. Preheat to 350°F (180?C).
  2. In medium bowl, mix coconut, oats, brown sugar, bran cereal and cinnamon.
  3. Add lentil puree, oil, egg and vanilla. Mix until dry ingredients are just moistened.
  4. Spread over a 10½ x 16 (25 x 40 cm) nonstick cookie sheet. Bake 30 minutes, or until lightly browned.
  5. While bars are still warm, drizzle chocolate over top and cut into 35 bars.
