  • Frozen green peas | 10.00 oz
  • Butterhead lettuce, raw | 1.00 head 5" dia
  • Chicken broth, low sodium, canned | 5.00 cup
  • Corn, sweet, yellow, canned, whole kernel, drained solids | 2.00 cup
  • Salt | 0.25 tsp
  • Spices, pepper, black | 1.00 dash
  • Low fat sour cream | 5.00 tbsp
  • Spring onions | 4.00 small 3" long
  • Sour cream, reduced fat | 5.00 tbsp

  1. Chop the scallion and lettuce first. Take a large saucepan; melt butter over medium to high heat. Toss scallion, lettuce and peas; cook and stir constantly until the scallion becomes translucent.
  2. Add broth and bring it to boil. Lower down the heat and let it simmer for 8 minutes or until the peas are tender. Process the mixture in a blender and return to the pan. Add corn and cook again for 2 to 3 minutes over medium heat. Season it to taste.
  3. Pour the soup into the serving bowls and top each serving with 1 tbsp sour cream.
