- Chop the scallion and lettuce first. Take a large saucepan; melt butter over medium to high heat. Toss scallion, lettuce and peas; cook and stir constantly until the scallion becomes translucent.
- Add broth and bring it to boil. Lower down the heat and let it simmer for 8 minutes or until the peas are tender. Process the mixture in a blender and return to the pan. Add corn and cook again for 2 to 3 minutes over medium heat. Season it to taste.
- Pour the soup into the serving bowls and top each serving with 1 tbsp sour cream.
