Ingredients

  • Frozen lima beans, unprepared | 1.00 package 10 oz
  • Garlic, raw | 4.00 Tbsp
  • Cayenne pepper | 0.25 tsp
  • Olive oil | 2.00 tablespoon
  • Lemon juice, raw | 4.00 tsp
  • Spices, cumin seed | 1.00 tsp powdered
  • Salt | 0.50 tsp
  • Spices, pepper, black | 1.00 dash
  • Fresh spearmint | 1.00 tbsp
  • Cilantro, Fresh, Chopped | 0.50 oz
  • Fresh dill weed | 1.00 tbsp

Instructions

  1. Bring a large saucepan of lightly salted water to a boil.
  2. Add frozen Lima beans, peeled minced garlic and crushed red pepper; cook until the beans are tender, about 10 minutes. Remove from heat and let cool in the liquid.
  3. Drain the beans and garlic.
  4. Transfer to a food processor.
  5. Add oil, lemon juice, cumin, salt and pepper; process until smooth.
  6. Scrape into a bowl, stir in chopped mint, chopped cilantro and chopped fresh dill.
  7. Serve fresh with tacos or chips.
