Lima Bean Tart with Caramelised Onions Recipe

Ingredients

  • Puff pastry, frozen, ready-to-bake | 8.00 oz
  • Olive oil | 2.00 tablespoon
  • Onions raw | 3.00 slice, medium 1/8" thick
  • Salt | 1.00 dash
  • Spices, pepper, black | 1.00 dash
  • Granulated sugar | 1.00 tsp
  • Lima beans, immature seeds, boiled, drained, without salt | 2.00 cup
  • Cheese, parmesan, grated | 2.00 tbsp
  • Gruyere cheese | 1.00 oz
  • Egg, whole, raw | 3.00 small
  • green onions tops | 5.00 stalk
  • Cream, fluid, half and half | 0.50 cup

Instructions

  1. On a plain surface dusted with flour, roll out pastry dough.
  2. Grease and line a 20x5-cm tart pan and keep it in refrigerator for 10 minutes.
  3. In a heavy based sauce pan, heat oil, add onions, salt and sugar. Cook for 20 minutes or until onions have caramelized with a golden color. Set aside.
  4. In a food processor, process the butter beans into fine puree.
  5. Pour it in a bowl, add Parmesan, Gruyere, eggs and season to taste. Mix well.
  6. Now pour this mixture over the pastry base, bake for 30 to 35 minutes at 180 C until surface is slightly golden in color.
  7. Leave to cool for 10 minutes.
  8. In a small bowl, mix chopped spring onions and cream together. Top baked tart with cream mixture and caramelized onions.
  9. Lima bean tart with caramelized onion is ready to serve!
