  1. Boil the potatoes in hot, boiling salted water for 15 to 20 minutes until tender.Drain well, then return to the pan and mash until smooth.
  2. Meanwhile heat the oil in a small pan, Remove from the heat and stir in the chopped coriander. Now put this mixture into a liquidizer and process to smooth paste.
  3. Add the coriander paste to the mashed potatoes and mix well till combined, season with salt and pepper.
