- Boil the potatoes in hot, boiling salted water for 15 to 20 minutes until tender.Drain well, then return to the pan and mash until smooth.
- Meanwhile heat the oil in a small pan, Remove from the heat and stir in the chopped coriander. Now put this mixture into a liquidizer and process to smooth paste.
- Add the coriander paste to the mashed potatoes and mix well till combined, season with salt and pepper.
- Stir in a little milk to from a softer mixture, if wished, and serve at once.
