- Chop the scallions and coriander, crush garlic clove, squeeze out juice of lemon; set them aside.
- Rinse the mixed beans under running water then drain well. Transfer them to a blender and blend until smooth.
- Put lemon juice, coriander, garlic, olive oil and scallions then blend until smooth. Season with salt and pepper to taste. Transfer them into a bowl and let chill in refrigerator for about 30 minutes.
- Garnish with the spring onions and serve with toast or as it is!
