Ingredients

  • Spring onions | 2.00 medium 4-1/8" long
  • Cilantro, Fresh, Chopped | 0.50 oz
  • Garlic, raw | 2.00 Tbsp
  • Lemons, raw, without peel | 1.00 fruit 2-3/8" dia
  • Olive oil | 2.00 tablespoon
  • Mixed vegetables, canned, no salt added | 2.00 cup
  • Salt | 1.00 dash
  • Spices, pepper, black | 1.00 dash

Instructions

  1. Chop the scallions and coriander, crush garlic clove, squeeze out juice of lemon; set them aside.
  2. Rinse the mixed beans under running water then drain well. Transfer them to a blender and blend until smooth.
  3. Put lemon juice, coriander, garlic, olive oil and scallions then blend until smooth. Season with salt and pepper to taste. Transfer them into a bowl and let chill in refrigerator for about 30 minutes.
  4. Garnish with the spring onions and serve with toast or as it is!
