Ingredients

  • Blueberries, raw | 12.00 oz
  • Cornstarch | 0.50 oz
  • Seedless raisins | 1.00 cup, packed
  • Whole grain wheat flour | 0.75 cup
  • Granulated sugar | 6.00 oz
  • Wheat flour, white, all-purpose, enriched, unbleached | 0.25 cup
  • Low sodium baking powder | 1.50 tsp
  • Salt | 0.25 tsp
  • Low fat vanilla yogurt | 0.33 cup 8 fl oz
  • Butter without salt | 2.00 tbsp
  • Egg, whole, raw | 1.00 small

Instructions

  1. Heat oven to 400°F.
  2. Spray 11x7-inch glass baking dish with cooking spray.
  3. Pour berries into dish. Stir in /2 cup sugar and cornstarch.
  4. Cover with waxed paper.
  5. Microwave on high 10 to 12 minutes, stirring twice and rotating dish, until fruit is hot and beginning to thicken. Stir in 1/3 cup raisins.
  6. Combine flours, 2 tablespoons sugar, bakingpowder and salt in small bowl.
  7. Stir in 3 /4 cup raisins.
  8. Combine yogurt, melted butter and egg. Add to flour mixture.
  9. Stir just until moistened.
  10. Drop biscuit dough by small spoonfuls over hot fruit. Sprinkle with 2 teaspoons sugar.
  11. Bake 12 to 14 minutes or until biscuits are golden brown and thoroughly cooked. Cool slightly.
  12. Serve with frozen yogurt, if desired.
