  • Mangos, raw | 1.00 fruit without refuse
  • Sweet Green peppers, raw | 1.00 medium
  • Garlic, raw | 2.00 Tbsp
  • Onions raw | 2.00 small
  • Peanut oil | 2.00 tbsp
  • Egg noodles, dry | 9.00 oz
  • Tomato paste, canned without salt | 1.00 tbsp
  • Dry roasted mixed nuts | 0.25 cup
  • Peanut butter, chunky , no salt | 1.00 tbsp

  1. Thinly slice onions along with peppers and chili after removing their seeds. Crush garlic cloves and also cut strips of mango after slicing it. Keep all of these aside.
  2. Soak noodles in a large bowl with boiling water for 10 minutes.
  3. Heat oil in a large saucepan. Add crushed garlic, sweet peppers, chili and onions. Saute for 3 minutes.
  4. Strain noodles and add them to the saucepan along with mango strips. Cook for 2 more minutes.
  5. In a bowl, mix together the coconut milk, tomato paste and peanut butter.
  6. Dish out the noodles in a serving bowl, sprinkle roasted peanuts over it then pour spoonfuls of tomato mixture and serve!
