  • Small white beans raw | 2.00 cup
  • Drinking tap water | 4.00 cup 8 fl oz
  • Onions raw | 1.00 medium 2-1/2" dia
  • Salt | 0.50 tsp
  • Apple cider vinegar | 2.00 tsp
  • Mustard, prepared, yellow | 0.50 tsp or 1 packet
  • Brown sugar | 1.00 tbsp packed
  • Spices, pepper, black | 1.00 dash
  • Cured salted pork raw | 4.00 oz

  1. Warm up an oven to 250*F.
  2. Soak beans by a method listed in the introduction. Pick and rinse beans.
  3. Add 4 cups of cold water, cover, heat to boiling, simmer for 30 minutes. Drain keeping liquid.
  4. Place sliced onion in bottom of 6 cup casserole dish. Mix seasonings, and turn into pot.
  5. Add beans, and hot liquid or water to cover. Arrange pork slices on top. Cover and bake in slow oven for seven hours.
  6. At end of four hours, remove one cup of beans, mash, then stir back into remaining beans carefully. Cover and continue to bake.
  7. Add liquid several times to keep beans just covered. One hour before serving, remove cover to allow pork to brown. Serve hot.
