  • Orange(s) | 1.00 large 3-1/16" dia
  • Papayas, raw | 1.00 fruit, large
  • Onions raw | 1.00 small
  • Butterhead lettuce, raw | 1.00 head 5" dia
  • Lemon juice, raw | 2.00 tbsp
  • Olive oil | 4.00 tablespoon
  • Salt | 1.00 dash
  • Spices, pepper, black | 1.00 dash

Instructions

  1. Peel the papaya and cut in half lengthways then scoop out its seeds, reserve 1 tsp of seeds.
  2. Cut the halves into 8 slices. Half the avocados and then remove stones.
  3. Peel the skin off, thickly slice each avocado half; peel the orange and cut out its segments. Slice the onion thinly and separate its rings.
  4. For dressing, in a bowl, combine lemon juice, oil and seasoning then mix well.
  5. Stir in the 1 tsp papaya seeds.
  6. Gather the salad on four serving plates.
  7. Arrange alternate slices of papaya and avocado, then an orange and a lettuce leave topped with onion rings.
  8. Drizzle the dressing over it. Serve immediately.
