  • Powdered sugar | 2.00 tbsp unsifted
  • Lime juice, raw | 2.00 tbsp
  • Passion Fruit juice | 5.00 fl oz
  • Papayas, raw | 3.00 fruit, small

  1. Half the passion fruit, cut papaya into two halves and scoop out its seeds then cut its flesh into chunks.
  2. Thread the chunks on to six skewers.
  3. Scoop out the flesh of passion fruit with a teaspoon.
  4. Put the flesh in a blender and blend for few seconds.
  5. Pass the puree through a sieve, discard seeds. Then put rum, lime juice and sugar, stir until sugar has dissolved.
  6. Ladle some coulis on to six serving plates.
  7. And then arrange the skewers on top.
  8. Decorate with lime slices and serve.
