Ingredients

  • Spices, cinnamon, ground | 0.50 tsp
  • Cornstarch | 1.00 oz
  • Peach nectar, canned | 1.00 cup
  • Canned peaches in juice | 2.00 cup
  • Canned pineapple, drained | 0.25 cup, chunks
  • Margarine, regular, hard, soybean hydrogenated | 1.00 tbsp
  • Pancakes, plain, dry mix, complete, prepared | 8.00 oz
  • Wheat flour, white, all-purpose, enriched, unbleached | 0.66 cup
  • Granulated sugar | 0.50 serving packet
  • Yogurt, plain, skim milk | 0.66 cup 8 fl oz
  • Spices, nutmeg, ground | 0.50 tsp
  • Brown sugar | 1.00 tbsp packed
  • Cooking spray | 0.25 spray , about 1/3 second 1 NLEA serving

Instructions

  1. Combine cinnamon, vanilla, cornstarch, peach nectar, and pineapple or peach juice in saucepan over medium heat.
  2. Stir constantly until mixture thickens and bubbles.
  3. Add sliced peaches to mixture.
  4. Reduce heat and simmer for 5-10 minutes.
  5. In another saucepan, melt margarine and set aside.
  6. Lightly spray 8-inch square glass dish with cooking spray. Pour in peach mixture.
  7. In another bowl, combine pancake mix, flour, sugar, and melted margarine.
  8. Stir in milk.
  9. Quickly spoon this mixture over peach mixture.
  10. Combine nutmeg and brown sugar.
  11. Sprinkle mixture on top of batter.
  12. Bake at 400º F for 15-20 minutes, or until golden brown.
  13. Cool and cut into 8 squares.
