Ingredients

  • Peanut butter chunky with salt | 0.50 cup
  • Brown sugar | 0.25 cup packed
  • Baking chocolate, unsweetened, liquid | 3.00 oz
  • Butter salted | 0.50 cup
  • Egg, whole, raw | 3.00 medium
  • Granulated sugar | 1.50 cup
  • Drinking tap water | 2.00 tbsp
  • Low sodium baking powder | 1.00 tsp
  • Wheat flour, white, all-purpose, unenriched | 1.00 cup

Instructions

  1. In a small bowl, beat the peanut butter, brown sugar and 2 tablespoons flour until blended; set aside.
  2. In a microwave-safe bowl, melt chocolate and butter; stir until smooth; cool slightly.
  3. In a large bowl, beat the eggs, sugar and water; stir in chocolate mixture and vanilla.
  4. Combine baking powder and remaining flour; gradually add to chocolate mixture.
  5. Fill paper-lined muffin cups one-fourth full.
  6. Top each with about 1 teaspoon of peanut butter mixture. Spoon remaining batter over the top.
  7. Bake at 350° for 13-15 minutes or until centers are set (do not overbake). Cool for 5 minutes before removing from pans to wire racks.
