Ingredients

  • Wheat flour, white, all-purpose, unenriched | 3.00 cup
  • Granulated sugar | 2.00 cup
  • Salt | 1.00 tsp
  • Baking soda | 1.00 tsp
  • Spices, cinnamon, ground | 1.00 tsp
  • Egg, whole, raw | 3.00 medium
  • Canola oil | 1.25 cup
  • Canola oil | 2.00 tsp
  • fresh pineapple extra sweet | 1.00 cup, chunks
  • Bananas, raw | 2.00 cup, mashed

Instructions

  1. In a large bowl, combine the flour, sugar, salt, baking soda and cinnamon. In another bowl, whisk the eggs, oil and vanilla; add pineapple and bananas. Stir into the dry ingredients just until moistened.
  2. Pour into two greased 8-in. x 4-in. loaf pans.
  3. Bake at 350° for 60-65 minutes or until a toothpick comes out clean. Cool for 10 minutes before removing from pans to wire racks.
