Ingredients

  • Potato, flesh and skin, raw | 1.00 Potato large 3" to 4-1/4" dia
  • Onions raw | 0.25 cup, chopped
  • Sweet Green peppers, raw | 0.25 cup, chopped
  • Fat free liquid egg substitute | 1.00 cup
  • Salt | 0.25 tsp
  • Spices, pepper, black | 1.00 dash
  • Spices, garlic powder | 0.12 tsp
  • Low fat milk, with vitamin A and D | 0.25 cup

Instructions

  1. Combine potato, onion and green pepper in a 9-inch microwave-safe pie plate.
  2. Cover with microwaveable plastic wrap and microwave at HIGH for 5 minutes, or until potato is tender.
  3. Combine eggs, milk, salt, pepper and garlic powder in a medium bowl; beat slightly. Pour over potatoes in pie plate.
  4. Cover with microwaveable plastic wrap and microwave at HIGH for 4 minutes, stir after 2 minutes. Cover and leave to rest for a minute.
  5. Serve immediately.
