- Cook, peel and dice the potatoes.
- Add onion and chopped parsley and toss lightly and set aside to chill.
- Put the potato in the center of a platter lined with lettuce leaves.
- Put a frankfurter (cut into half 1-inch thick piece) on each slice of ham and roll up.
- Arrange the ham rolls around the dish and garnish with hard-boiled eggs.
- While serving put some cream dressing on top if desired.
