Ingredients

  • White potatoes, raw | 1.00 lb
  • Spring onions | 6.00 medium 4-1/8" long
  • Parsley, raw | 1.00 tsp
  • Lettuce, green leaf, raw | 1.00 head
  • Ham, sliced, regular, 11% fat | 4.00 slice
  • Chicken frankfurter | 2.00 link
  • Hardboiled egg(s) | 2.00 large

Instructions

  1. Cook, peel and dice the potatoes.
  2. Add onion and chopped parsley and toss lightly and set aside to chill.
  3. Put the potato in the center of a platter lined with lettuce leaves.
  4. Put a frankfurter (cut into half 1-inch thick piece) on each slice of ham and roll up.
  5. Arrange the ham rolls around the dish and garnish with hard-boiled eggs.
  6. While serving put some cream dressing on top if desired.
