  • Low fat sour cream | 0.25 cup
  • Onions raw | 0.50 small
  • Spices, cinnamon, ground | 0.13 tsp
  • Potato, flesh and skin, raw | 2.00 Potato medium 2-1/4" to 3-1/4" dia
  • Granulated sugar | 2.00 tsp
  • Salt | 1.00 dash
  • Lemon juice, raw | 1.00 tsp
  • Spices, pepper, black | 1.00 dash
  • Apples, raw, with skin | 2.00 medium 3" dia
  • Butter without salt | 1.00 tbsp

  1. De-seed and dice apples and grate onion, set aside. Take a skillet and heat butter in it on medium flame. Put diced apples and mix well to cover them with butter. Add lemon juice, cinnamon and sugar and let it cook for 2-3 minutes mixing constantly till apples are softened and changes color. Take them out in a bowl and set aside.
  2. Place onion in a bowl. Take a clean dish towel and grate potatoes and press them in a dish towel to make them as dry as achievable. Mix with onions then season to taste using pepper and salt.
  3. Take large deep base skillet pour ½ inch oil and let it heat, put tablespoons of potato and onion mixture in oil. Even out a little bit and let them fry for 5 to 6 minutes.
  4. Placing them on paper towels let them drain. Before serving put one teaspoon caramelized apple on top of every potato cake. Then place flat leaf parsley and serve warm.
