Ingredients

  • Potato, flesh and skin, raw | 3.00 Potato large 3" to 4-1/4" dia
  • Carrots, raw | 1.00 medium
  • Onions raw | 1.00 medium 2-1/2" dia
  • French beans, raw | 0.25 cup
  • Wheat flour bleached | 0.25 cup
  • Organic vegetable broth | 1.25 cup
  • Tofu, firm, nigari | 8.00 oz
  • Salt | 1.00 dash
  • Spices, pepper, black | 1.00 dash
  • Butter salted | 2.00 tbsp

Instructions

  1. Peel and cut potatoes, carrot and tofu in to cubes. Also slice the onion.
  2. Now melt butter in a deep frying pan, add slices of onion, French beans, carrot and potato cubes. Stir fry in a gradual manner.
  3. After stir frying for 5 minutes when vegetables start to soften, add flour and cook for a minute while stirring.
  4. Pour vegetable broth into the pan, mix and let simmer on low flame for 15 minutes till potatoes are soft and tender.
  5. Add tofu cubes to the pan, season according to your taste and cook for another 5 minutes.
  6. Serve hot and garnish with freshly chopped parsley.
