- Trim and finely chop the leeks; peel and chop the carrots; peel and cut the potatoes into chunks. Open the garlic head and roast the garlic for 20 minutes. Cool them, and then squeeze out the flesh.
- Take a large saucepan of boiling water, cook potatoes and carrots in it for 15 minutes. Drain them and then mash garlic flesh.
- Now add the leeks, cheese, Tabasco sauce, pepper and coriander to the sweet potato mixture. Cover and refrigerate for 30 minutes. Preheat the oven at a temperature of 375?F. Shape the mixture into 8 small round patties and place them on the baking sheet. Bake for 20 minutes.
- Serve with the ketchup.
