- Peel and chop the potatoes then saute them in butter in a skillet, for 10 minutes, or until lightly browned.
- Peel and chop the apple, mince garlic clove, snip parsley and beat the egg. Add these to potatoes along with onion, croutons and salt.
- Saute well then put the mixture into a 1.5-quart casserole.
- Bake, covered, at 325*F for 30 minutes, or until heated through.
- Serve or reserve!
