Ingredients

  • Powdered sugar | 1.75 cup sifted
  • Self-rising enriched wheat flour | 1.50 cup
  • Butter without salt | 0.50 cup
  • Egg, whole, raw | 4.00 small
  • Canned pumpkin | 1.00 cup
  • Salt | 1.00 tsp
  • Spices, cinnamon, ground | 2.00 tsp
  • Ginger root, raw | 1.00 tsp
  • Spices, cloves, ground | 0.50 tsp
  • Canned milk, eveporated, with vitamin A | 12.00 fl oz
  • light whipping cream | 1.00 cup, whipped

Instructions

  1. Preheat oven to 425 degrees.
  2. In a bowl, combine 1/4 cup sugar and flour; cut in the butter until the mixture resembles coarse crumbs. Press into an ungreased 13 x 9 x 2 - inch baking pan.
  3. In a bowl, combine the eggs, pumpkin, salt, spices and remaining sugar.
  4. Stir in milk. Pour over crust.
  5. Bake for 15 minutes at 425 degrees.
  6. Reduce heat to 350 degrees; bake for 50-55 minutes or longer, until knife inserted in center comes out clean.
  7. Cool on a wire rack.
  8. Cover and refrigerate overnight.
  9. Cut into squares. Top with the whipped cream and sprinkle with the additional cinnamon, if desired.
