Ingredients

  • Self-rising enriched wheat flour | 0.50 cup
  • Spices, nutmeg, ground | 0.25 tsp
  • Baking soda | 0.50 tsp
  • Butter salted | 6.00 tbsp
  • Powdered sugar | 0.50 cup sifted
  • Maraschino cherries, canned, drained | 0.12 cup halves
  • Seedless raisins | 2.00 oz
  • Seedless golden raisins | 0.12 cup not packed
  • Lemon peel, raw | 2.00 tbsp
  • Egg, whole, raw | 1.00 medium
  • Reduced fat milk with added vitamin A and D | 6.00 tbsp
  • Whole grain wheat flour | 4.00 oz

Instructions

  1. Grate rind of a lemon, beat an egg and set aside.
  2. Take a mixing bowl, place flour, baking soda and nutmeg and rub it in butter with your fingertips. Add sugar, raisins and golden raisins and lemon rind. Add beaten egg and milk to prepare a batter with soft dropping consistency. Fill greased and lined 1 lb loaf pan with spoonfuls of batter.
  3. Preheat oven to 350?F and bake for 50 to 60 minutes. Turn the loaf cake to cool on a wire rack. Slice cake and serve with spread of little butter.
