- Scoop out the passion fruit pulp in a bowl with a teaspoon, put cheese and sugar then mix them.
- Take a small bowl, mash the raspberries in it with a fork until their juice runs.
- Take four stemmed glasses, put alternate spoonfuls of cheese mixture and raspberry pulp to create a gentle swirl effect.
- Decorate with whole raspberries and a mint spring.
- Serve as it is or lightly chilled.
