Ingredients

  • Whole grain wheat flour | 1.00 cup
  • Low sodium baking powder | 1.00 tsp
  • Spices, cinnamon, ground | 1.00 tsp
  • Baking soda | 0.50 tsp
  • Salt | 0.50 tsp
  • Brown sugar | 1.00 cup packed
  • Vanilla pudding, fat free | 0.50 serving 3.5 oz shelf stable
  • Canola oil | 2.00 tbsp
  • Egg, whole, raw | 1.00 medium
  • Whole wheat, rolled oats, presweetened, with pecans, cereal | 1.33 cup 1 NLEA serving
  • Seedless raisins | 1.00 cup, packed

Instructions

  1. Heat oven to 350°F.
  2. Cover 2 cookie sheets with parchment paper.
  3. Combine flour, baking powder, cinnamon, baking soda and salt together in small bowl.
  4. Combine brown sugar, oil, egg and vanilla in large bowl.
  5. Add flour mixture to make a blended dough.
  6. Stir in oats and raisins.
  7. Drop mixture by rounded teaspoonfuls 2 inches apart on prepared cookie sheets.
  8. Bake for 10 to 12 minutes until very lightly browned.
  9. Do not over bake.
  10. Slide cookies on the parchment paper onto the countertop to cool
